google is your friend :) I think every DAW has some kind of pitch shifter, the one in Ableton works great for me but I don't really ever change pitch to my youtube vidz

Depends on the tuning. Generally speaking I prefer 25.5 in 7s, 27 on 8s :)

Blackhawk set with ceramic bridge is your best option :)
