Would it be permissible if I look at what the 4 madhahib say regarding a topic and then always choose the opinion (of a madhab, not one scholar out of everyone) to make life as easy and comfortable as possible? Eg. wiping over socks (hanbali), food after istihala (acc to hanafis) etc.?

There's absolutely no problem with that, as long as you're following the mainstream opinion (al-mu'tamad) of each mathhab.
The problem begins when
1) considering weaker opinions.
2) studying the proofs to the extent that you become certain one opinion is stronger than the other, then follow the weaker opinion.
3) merging opinions in the same issue to reach a deformed hybrid that isn't valid. (Ex: if you marry a woman with no wali according to Abu Hanifa, no witnesses according to Malik and no public announcement according to Ahmed = that's no better than adultery)

لو خرجت قبل الشفع والوتر، يكتب لي قيام ليلة بردو؟

على قول الجمهور، لا.
إما أن تصلي معه الشفع والوتر، ثم إن صليت بعدها لا توتر مرة ثانية.
أو تصلي معه الشفع، ثم تقوم متنفلا فتصلي معه وتره وتقوم لركعة ثانية بعد تسليمه.
ثم توتر في آخر الليل.

I am looking to start the Hanbali madhab after Ramadan. I am torn between starting with Sh. Mutlaq and Sh. BaJaber's lessons. What are the pros to both?

Start with whomever you understand better.
Sheikh bajabir is in the ranks of the teachers of Sheikh mutlaq, but his explanation might be too difficult for some beginners.

Can we try to make Zakah to an islamic organization that accepts Zakah and use the donation receipt to cut it from the taxes?

No.
That is like picking the worst of your clothes for charity, while in fact you're trying to get rid of them.
Allah only accepts that which is given beautifully and whole heartedly for His sake alone.

What are we to do if we are not sure if we miscounted the number of times we washed a body part during wudu? Ex: we count washing face three times then doubt that we actually washed twice?

Build on the minimum number you're certain.

When someone says the Prophet Muhammad Pbuh is Noor, I’m not sure how to take this. I understand the last verse of surah Kahf. Is it wrong to believe he is Noor ?

It's a correct statement, he is the Noor, meaning, metaphorically of course, because he takes people from the darknesses.
Similarly, God describes Himself as Noor. That too is metaphorical. Noor (Light) is a creation of God. But His Light means His Guidance.
As to the Sufi nonsense that he, peace be upon him, was literally created from light, as I said, that's Sufi nonsense.

I started fasting Ramadan with 14 but it became obligatory upon me with 12. Do I have to makeup every day once or do I have to fast 60 days for each intentionally missed fast? And how many poor people do I have to feed?

You fast one day for each day missed.
And because this has taken you more than one full year (making up must be done usually before the following Ramadan) then there's an added expiation: 750 grams of dates per each day missed given to a poor.
Still, alhamdolillah, significantly easier than 60 days per :)

في مذهب الحنابلة: تغطي المرأة جميع جسدها حتى كفيها. ولا يشرع لها كشف شيء سوى وجهها.
والخلاف في اليدين قوي
والخلاف في القدمين ضعيف، وغايته عندنا جواز انكشاف باطن قدميها إذا سجدت
وعند السادة الاحناف قول بجواز كشف ظاهر القدمين، والقول ضعيف ومخالف لجمهور الفقهاء، لا نرى الأخذ به، لكن نحيل إليه إعذارا لأمهاتنا الفاضلات اللواتي نشأن على هذا والأخوات غير المتعلمات في القرى والأرياف.

يجب أن تعطى زكاة المال مالا بالتمليك لمستحقه.

حكم لبس الملابس التي بها صور والصلاة بها ؟

الصورة: كل ما كانت رسما أو تجسيما لإنسان أو حيوان.
يحرم لبس الصور بالاتفاق في مذهب السادة الحنابلة، جزم به صاحب الإنصاف.
وقالوا أنه معصية، وعدها الكثير من العلماء من الكبائر. ويكفي فيه الحديث المشهور: لا تدخل الملائكة بيتا فيه صورة.
وتكره الصلاة على سجاد فيه صورة، وتشتد الكراهة إذا كانت الصورة موضع السجود.
ولا تبطل الصلاة بثياب فيها صور.
وتزال الحرمة بالطمس أو التلطيخ أو النقض. مثلا: بوضع الحبر حتى يغطي الوجه، أو حك الصورة حتى تذهب العينان، أو مسح الرقبة بحيث ينفصل الرأس عن الجسد، ونحوها من الوسائل.

Is there a difference in opinion on this? My mom doesn't believe it's mandatory (she only starts at the wrists). Is it bad if I refuse to pray jama3a with her? Because I'm afraid both our prayers won't be accepted if she isn't making wudu properly

Must wash hands from fingertips to elbows.
