When we have to use "mean" and "means"? It's different or same?

"Mean" is the present tense form of "mean" for I, you, and plural nouns:
- I mean what I say.
- They mean you no harm.
"Means" is the present tense form of "mean" for all other singular nouns:
- She means the world to me.
- He means to do nice deeds, but he always messes up.
- This score means that you didn't study.

So for fish, if I own a couple of the same kind, for example tuna, do I say,"I own a couple of tuna fishes" or "I own a couple of tuna fish"?

"I own a couple of tuna" or "I own a couple of fish." ("I have a couple of tuna fish" would also be right, but it's redundant.)
To be honest, very few people care about "fish" vs. "fishes"; just use "fish" as the plural of "fish" in every instance, and you should be fine (unless you're dealing with an ichthyologist—a scientist who studies fish).

That's a good question. This is because "money" is considered a mass noun. We generally don't use "monies" as the plural of "money."
For example, "I have a lot of money." (We don't say "I have a lot of monies.")
Similarly, "I have a lot of time." (We don't say "I have a lot of times.")
"Monies" (or "moneys") is technically not wrong, but it has a specific usage: if you want to emphasize that the funds are coming from various sources, use "moneys" or "monies"; otherwise use "money."

If it hasn't happened yet, and if it's probably never going to happen, then "What WOULD you do if your song BECAME number one?" is the best.
If it's likely to happen (for example, the song is #2 on the charts this week), then "What WILL you do if your song BECOMES number one?" is the best.

"Depends" means "is controlled or determined by (something)".
The second part of your question is confusing, but we'll try to answer it.

Henry: Just kidding! Of course I'm going!
Using "depends" like that is the same as "It depends." Use it that way only in conversations, not in formal writing.

"Like seriously?!" is something someone says when they're surprised or in disbelief:
Henry: Peter met G-DRAGON and T.O.P at the airport yesterday.
Nan: Like seriously?! And he didn't call me?!
It's informal/slang.

What's the difference between it hurts and its hurt?

"It hurts": Please don't touch my leg; it hurts. It hurts so much that I can't even stand up.
"Its hurt": The dog licked its hurt leg. Nan gave it a biscuit to soothe its hurt feelings.

You got it exactly right: "doing" a course sounds awkward and informal.
Personally, none of us admins use "doing" a course; we all use "taking" a course. Moreover, if you want to be really formal, you could say "I am ENROLLED IN a business management course this year."

- Can't go to Peter's party
- It's boring
