Hyphens will connect words like "sugar-free" or temperatures like "Oh, it's 30-40 degrees today!"
Dashes are used when there is a break in thought or side thought. Most people learn about the typical story line of (ex) "Jane extended her arm to reach a novel on the—her cell phone rang."
